Natural traditional white wine from begleri varietal (100%) with I.G.P. IKARIA. Cloudy with a bright gold color. Smoky, grapefruit, and earthy scents (such as first rain and wet granite), and mushrooms. A pure terroir wine; very complex, rich in minerals, with an evolving taste, and a unique flavor. Hints of wild herbs, tobacco, citrus fruits, and a wet granite finish. Combined with vegetables with lemon. 11,0% vol. Vineyards: Ikaria, Raches, Patissa 0,5 ha, prephylloxeric vineyard, plant age 200+ years, organic multicultivation, (yield 14hl/ha) altitude 800 m. Granite soil with low pH and high concentration in metals and trace elements. Winemaking: Traditional, manual deposturing, pressure inside the granite press on foot, stay for 2 days and continuation of the fermentation with the indigenous yeasts in jars dug into the earth outside. Without mechanical interventions and filtering, only a minimal saturation before bottling.
Wine produced by the excellent white Assyrtiko variety, which is grown in the mountainous areas of Chios. Vineyards are not watered. For the vininfication of this natural red dry wine the grapes at first are sun dried for about a week. It matures for 18 months, in a naturally moist and cold cellar, in oak barrels of about 6 years of age.

Muscat, White, organic. KOSTAKI ALO is our light and crisp dry white wine with moderate, 11.5% alcohol. The idea behind ALO was to make a wine suitable for every occasion. Chiotiko Krassero is the only native variety that, since antiquity, was giving the fabled “Ariousios Wine”, for which Chios was famous throughout the then known world. Made from vineyards 30 to 40 years old. For the vininfication of this natural red dry wine the grapes at first are sun dried for about a week. No oenological material (e.g. enzymes, yeasts) is added during fermentation, while the cooling and filtration processes are not applied during stabilization.
A natural red wine made from Fokiano (100%) varietal with the most ancient winemaking technique of Ikaria. Opaque, natural red-brown color with orange highlights, and long-lasting legs. Ripe forest fruits such as cherry, lychee, and blackberry in spoon sweet. Flavors of sour cherry and wild cherry dominate; with intense minerality, with a wet granite finish. Vineyard: Ikaria , Raches , Profitis Ilias 1,5ha, age of grapevines 50 and 10 years old, yield 25 hl/ha, organic cultivation, altitude 600 m. Sandy clay soil from decomposed granite rock with low pH and high concentration in minerals and micronutrients. Vinification: Traditional local method, with grapes manually destemmed and squeezed in a winepress made of 5 large granite stones, macerated for 3-5 days and then fermented with their own yeast in clay jars buried in the earth in a special hold outside the winery. During this process there is no mechanical intervention or filtering, except some minimum sulfating before bottling.
On the slopes of Mount Amani, in ideal microclimate conditions, the local varieties Chiotiko krasero and Agiannitis are cultivated today, from which Ariosio’s Austriros is produced. Wine with attractive purple colour, aroma of red fruits and vanilla, rich and balanced in the mouth.

The full longlasting tanins of the variety are integrated and compose definitive structure in the total balance. Vineyard: Ikaria , Raches , Profitis Ilias 1,5ha, age of grapevines 50 and 10 years old, yield 25 hl/ha, organic/biodynamic cultivation, altitude 600 m. Sandy clay soil from decomposed granite rock with low pH and high concentration in minerals and micronutrients. Vinification: Manual harvest, stomped in the traditional cyclopean stone press and maceration inside there for 2 days, then it continues the fermentation without additing yeast and the aging process without skins in amphorae buried underground and outdoors for 10 months. It was bottled unfiltered, unfined, without added sulphites.

Local organic foods and ingredients stands for minimum transportation of goods around the globe ,meaning minimum fuel consumption and working hours spent,goods deliverred to people who would not have them and would not need them, anyway. With an exception for coffee and cocoa which will be offerred in their fair-trade version, plus some goods which are not grown in Greece, due to commercial purposes, even if they would easily be grown and produced, suçh as millet and lynseed, in our vegan restaurant on Patmos island, you will not be served mangos, pine-apples, cashew nuts etc. We have such a big diversity of plant goods to pick from in our part of the globe, really!
