100 gr sunflower seeds soaked in water overnight
Juice of one lemon
1/2 cup nutritional yeast
1/2 cup corn starch
1/2 cup olive oil or plant oil of preference
1 medium size sweet potato
1 tbsp turmeric powder
Mediterranean herbs of your choice (e.g rosemary, oregano, thyme, basil, sage etc.)
Bake the sweet potato in an oven in 200°C for 30 min.
When the sweet potato is baked, blend all the ingredients together (except for the med. herbs) in a food processor and blend until a creamy texture is reached. Pour the cheese cream in a sauce pan and while steering with a wooden spoon, cook until it thickens enough.
Choose a container according to your preferred shape. Brush with olive oil the inner surfaces of the container and sprinkle the mediterranean herbs that you chose.
Pour the thickened cheese in the container and by using a wooden spoon compress the mixture. Leave to cool down, then place in the fridge or serve right away!
