Η φιλοσοφία μας
Στην τρέχουσα κατάσταση, σε αυτόν τον πλανήτη, ΟΠΟΙΑΔΗΠΟΤΕ είδος επιχείρησης αφιερωμένη στον σεβασμό και την προστασία της ζωής και του περιβάλλοντος, γενικά, είναι μια ευλογία για τον πλανήτη και το σύμπαν και ως εκ τούτου ευλογείται από τον εαυτό του. Οποιοδήποτε είδος δράσης ή απόφασης ανακουφίζει τον πόνο της Ζωής, γενικά, είναι ευλογία για τον πλανήτη και το σύμπαν και ως εκ τούτου ευλογείται από αυτό. Υπάρχει κατανόηση εδώ και τώρα, που πρέπει να εξαπλωθεί.
Γιατί Vegan?
Ο βιγκανισμός μάχεται για όλους τους συντρόφους μας σε αυτή τη ζωή και συγκεκριμένα για την απελευθέρωση ζώων. Στέκεται για ένα εκατομμύριο λόγους ακόμα, αλλά το να βάλει τέλος στη βία σε κάθε της μορφή είναι ο πιο σημαντικός.
Γιατί Fairtrade?
Το δίκαιο εμπόριο μάχεται για όλους τους συντρόφους του είδους μας; δηλαδή για την ανθρώπινη απελευθέρωση. Η ανθρώπινη σκλαβιά, έστω και κρυφή, εξακολουθεί να επιβιώνει σε πολλά μέρη του κόσμου. Σε άλλα ευδοκιμεί. Για ορισμένα αγαθά, όπως το κακάο ή ο καφές, μοιάζει περισσότερο με τον κανόνα παρά την εξαίρεση. Η vegan διατροφή είναι επίσης φανταχτερή αυτές τις μέρες, έτσι δεν είναι; Θα περάσει πολύς κόσμος από τον τόπο μας. Θέλουμε να ενημερώνουμε τους επισκέπτες μας, ώστε να μπορούν να κάνουν συνειδητές επιλογές στη συνέχεια.
Γιατί Upcycling?
Η ανακύκλωση σημαίνει το αντίθετο της εκβιομηχάνισης. Ενεργούμε φυσικά. Συλλέγουμε, αναδιαμορφώνουμε και επαναχρησιμοποιούμε ό, τι μπορεί ακόμα να χρησιμοποιηθεί. Δεν αγοράζουμε νέα πράγματα όταν μπορούμε να τα αποφύγουμε. Επομένως τα εργοστάσια λειτουργούν όλο και λιγότερο. Έχω ακούσει και διαβάσει: Σε έναν απλό τρόπο ζωής, ολόκληρη η ανθρωπότητα θα μπορούσε να ζήσει ικανοποιητική, άνετη ζωή, μόνο με τα πράγματα που πετάγονται στα σκουπίδια. - Επιπλέον η ανακύκλωση μειώνει το κόστος των κατασκευών, καθιστώντας τη διαδικασία δημιουργίας διαθέσιμη για κάθε άνθρωπο. - Εν πάση περιπτώσει, η φύση είναι ανακυκλώσιμη.
Γιατί τοπικά & βιολογικά;
Τα τοπικά βιολογικά τρόφιμα και συστατικά αντιπροσωπεύουν την ελάχιστη μεταφορά αγαθών σε όλο τον κόσμο, που σημαίνει ελάχιστη κατανάλωση καυσίμου και ώρες εργασίας, αγαθά που παραδίδονται σε άτομα που δεν θα τα είχαν και ούτως ή άλλως δεν θα τα χρειάζονταν. Με εξαίρεση τον καφέ και το κακάο που προσφέρονται μόνο στην έκδοση του δίκαιου εμπορίου, καθώς και ορισμένα προϊόντα που δεν καλλιεργούνται στην Ελλάδα, (ακόμη και αν θα μπορούσαν εύκολα να καλλιεργηθούν και να παραχθούν), όπως το κεχρί και το λινσάρι, δεν σερβίρονται υλικά όπως μάνγκο, παπάγια, καρύδα, κάσιους κ.λπ. στο χορτοφαγικό μας εστιατόριο στην Πάτμο. Έχουμε μια τόσο μεγάλη ποικιλία φυτικών ειδών για να διαλέξετε !

Gozde
Γεια σας, Είμαι η Γιόσντε Γεννήθηκα στην Κωνσταντινούπολη της Τουρκίας. Έγινα χορτοφάγος σε ηλικία 13 ετών, μέσα σε ένα νοσοκομείο στην Κωνσταντινούπολη, όταν κατά τη διάρκεια μιας μικρής επέμβασης με λέιζερ, έπιασα σαφώς τη μυρωδιά του ψητού κρέατος και σύντομα συνειδητοποίησα με τρόμο ότι ήταν σαν να καίγεται το δέρμα μου! Δεν έφαγα ποτέ κρέας ξανά από τότε! Σχεδόν όλη μου τη ζωή θυμάμαι να μαγειρεύω γεύματα για τους φίλους. Μετά το πρώτο μου ταξίδι στην Ινδία, αποφάσισα να κάνω τη μαγειρική το κύριο επάγγελμά μου. Πρώτα ως εθελοντής στο «κάμπινγκ Shambala» στη νότια Τουρκία, ετοίμαζα γεύματα για χιλιάδες ανθρώπους. Έγινα βίγκαν το 2010. Μετά από αυτό, μαγειρεύα επαγγελματικά για πολλά εστιατόρια στην τουριστική πόλη Κας, ταξίδεψα πίσω στην Ινδία όπου δημιούργησα το δικό μου εστιατόριο στην πόλη της Γκόα και προσκλήθηκα να συμμετάσχω σε ένα από τα μεγαλύτερα φεστιβάλ στον κόσμο «Ozora festival» όπου μαγειρεψα για 40.000 άτομα, βίγκαν παραδοσιακό τουρκικό και ελληνικό φαγητό. Μετακόμισα στην Ελλάδα πριν από ενάμισι χρόνο με την πρόθεση να μείνω και βρήκα δουλειά στο vegan εστιατόριο «Mama Tierra» στην Αθήνα, όπου συνάντησα τον Νικόλα! Λίγο αργότερα, δημιουργήθηκε μια ευκαιρία να ξεκινήσουμε τη δική μας μικρή επιχείρηση στην Πάτμο, το νησί της Αποκάλυψης!
Νικόλας
Γεια σας, Είμαι ο Νικόλας Γεννήθηκα στην Αθήνα και στα 19 μου, υιοθέτησα τη vegan φιλοσοφία και ηθική! Το 2014, από το Dunedin της Νέας Ζηλανδίας, ξεκίνησα με ένα μικρό εμπορικό θαλάσσιο φορτηγό πλοίο 45000 τόνων ως μαθητευόμενος μηχανικός (συνοδευόμενος από αποσκευές γεμάτες ξηρά φασόλια, ξηρούς καρπούς και πλιγούρι βρώμης!) ..Για δέκα μήνες... Από τότε, έχω ασχοληθεί εθελοντικά σε διάφορους τομείς όπως η φυσική γεωργία, οι κατασκευές από ανακυκλώσιμα υλικά, η εκπαίδευση παιδιών, η μαγειρική για ανθρώπους στο δρόμο. Όλο αυτό το διάστημα το μαγείρεμα ήταν ο τρόπος μου να πείσω τους ανθρώπους να αλλάξουν την προσέγγισή τους σε όλα, τα γη και το περιβάλλον. Δούλευα για δυόμισι χρόνια στη Mama Tierra, ένα από τα καλύτερα εστιατόρια για χορτοφάγους στην Αθήνα. Εκεί συνάντησα την Γιόσντε, ο οποίος μόλις είχε μτακομίσει από την Τουρκία στην Ελλάδα για να βρει δουλειά σε ένα εστιατόριο για χορτοφάγους ή βίγκαν!

-Prepare alcohol or non-alcohol beverages for bar and restaurant patrons
-Interact with customers, take orders and serve food and drinks. Know about vegan & fairtrade philosophy is very important for us as we want to present to people what actually they are eating. What is Seitan? What the vegan Pastichio has inside? It’s not needed to know from before, but the interest to learn is very important to us.
-Assess customers’ needs and preferences and make recommendations
-Mix ingredients to prepare cocktails
-Check customers’ identification and confirm it meets legal drinking age
-Restock and replenish bar inventory and supplies
-Stay guest focused and nurture an excellent guest experience
-Comply with all food and beverage regulations
-Stuck in the detail.
-Clean the tables & check if everything is okay for the customers.
