  • 100 gr sunflower seeds soaked in water overnight
  • 200ml water
  • Juice of one lemon
  • 1/2 cup nutritional yeast
  • 1/2 cup corn starch
  • 1/2 cup olive oil or plant oil of preference
  • 1 medium size sweet potato
  • 1 tbsp turmeric powder
  • Salt, pepper
  • Mediterranean herbs of your choice (e.g rosemary, oregano, thyme, basil, sage etc.)

How it is made

  • Bake the sweet potato in an oven in 200°C for 30 min.
  • When the sweet potato is baked, blend all the ingredients together (except for the med. herbs) in a food processor and blend until a creamy texture is reached. Pour the cheese cream in a sauce pan and while steering with a wooden spoon, cook until it thickens enough.
  • Choose a container according to your preferred shape. Brush with olive oil the inner surfaces of the container and sprinkle the mediterranean herbs that you chose.
  • Pour the thickened cheese in the container and by using a wooden spoon compress the mixture. Leave to cool down, then place in the fridge or serve right away!
