Yellow sweet & sour cheese with mediterranean herbs
Serves: 4 – Prep: 35 Minutes – Cook: 30 Minutes
Ingredients
- 100 gr sunflower seeds soaked in water overnight
- 200ml water
- Juice of one lemon
- 1/2 cup nutritional yeast
- 1/2 cup corn starch
- 1/2 cup olive oil or plant oil of preference
- 1 medium size sweet potato
- 1 tbsp turmeric powder
- Salt, pepper
- Mediterranean herbs of your choice (e.g rosemary, oregano, thyme, basil, sage etc.)
How it is made
- Bake the sweet potato in an oven in 200°C for 30 min.
- When the sweet potato is baked, blend all the ingredients together (except for the med. herbs) in a food processor and blend until a creamy texture is reached. Pour the cheese cream in a sauce pan and while steering with a wooden spoon, cook until it thickens enough.
- Choose a container according to your preferred shape. Brush with olive oil the inner surfaces of the container and sprinkle the mediterranean herbs that you chose.
- Pour the thickened cheese in the container and by using a wooden spoon compress the mixture. Leave to cool down, then place in the fridge or serve right away!
